Quiche with a Sweet Potato Crust

Am I the only person who is confused about what an actual sweet potato looks like? Like most people I had always thought sweet potatoes were the orange-fleshed potatoes, but when I made my way to Sprout a few weeks ago I was surprised that the potatoes under the sweet potatoes sign were white fleshed.  The orange-fleshed potatoes were under the “yams” sign. Are they the same thing? Anyway I’ve been trying to figure this out for a while so if you have any insight please let me know.

I love love love eggs. They are my favorite food and I can eat them done in any way, hard boiled, soft boiled, poached, scrambled, over-easy, you name it I love it. So it’s no surprise that I am a quiche lover. However, when I started eating healthy, the only way I knew how to make quiche was with a flaky butter, flour crust recipe. I knew this wasn’t healthy, so I refrained from making quiche until I ran into Fourteenforty365.com’s sweetpotato crusted quiche recipe. After reading the ingredients I knew I had to try it, so here’s how mine turned out. I also tweaked the recipe a bit as noted in the recipe card below.

These are the little things that get me so excited. Being able to turn the things I love into healthy versions – everybody wins.
 
Here’s the crust. I ended up getting the potatoes under the “sweet potato” sign, but as you can see they are white-fleshed. Still turned out perfectly!
