Whenever I find recipes for flourless cookies, the flour is
almost always replaced with something like almond flour/almond meal, coconut
flour, or something else that I might not always have stocked in my pantry.
However, when I found this recipe on Pinterest, I was surprised that there really is no
flour of any kind. I was also skeptical and excited because there were only
four ingredients involved: peanut butter, honey, egg and chocolate chips.
The original recipe did not include chocolate chips, but I
had some on hand so I threw them in. I used Enjoy Life chocolate chips to keep
the recipe more clean. Hubby and I were both nervous to take a bite after they
came out, but once we did we were hooked. These clearly were some of the best
cookies I have ever made, and I love to bake so that says a lot.
I recently made these again for Easter and doubled up the
recipe, which resulted in the use of just a little over one jar of peanut
butter.
